Lebanese Parsley Bites

Ingredients(Serves 4):

Dough

  • 1 cup bulgur wheat, drained
  • 1 cup fresh mint leaves, chopped
  • ½ cup pine nuts
  • 2 tbsp tomato paste
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 tsp each of black pepper and cumin, ground
  • 1 tsp cayenne pepper
  • 1 tsp paprika
  • Salt, to taste

Lebanese 7 Spice:
  • 4 tbsp black pepper
  • 4 tbsp cumin
  • ½ cup paprika
  • 2 tbsp ground coriander
  • 2 tbsp cloves
  • 2 cinnamon
  • 2 cardamom

Stuffing
  • 1 cup parsley, chopped
  • ½ cup mixed red, yellow and green bell-peppers, chopped
  • 2 tbsp red chilli powder
  • 2 tbsp cottage cheese (paneer), grated
  • Salt and pepper to taste

Method

  • Grind ingredients of Lebanese 7 spice.
  • Mix ingredients of dough in a food processor until smooth. Keep aside for an hour at room temperature.
  • Separately mix ingredients of stuffing. Add 3 tbsp of Lebanese 7 spice mixture.
  • Roll the dough in small shapes and fill with one tablespoon of stuffing. Place them on baking sheet.
  • Preheat oven to 176°C. Bake them for fifteen minutes, until golden brown and crispy.
  • Serve the bites with tahini.
